Woodman’s-Style Clam Chowder
Plucked from the coast of Massachusetts, this clam chowder is a must-try. To make this recipe more authentic, we call for two kinds of canned clams: chopped clams and whole baby clams. Be sure to purchase the high-quality canned clams; they are typically a little more expensive, but so worth it! Irresistibly light while satisfying, the Woodman’s of Essex clam chowder is relatively thin compared with other New England clam chowders. We use a secret ingredient to thicken ours slightly; its impact is subtle but it certainly bolsters the base’s flavor. Add a few oyster crackers (but skip the pesky seagulls) and a New England chowder experience is yours.
Gorditas
When our executive food editor, Bryan Roof, returned from Las Cruces, New Mexico, he was thrilled to speak about the gorditas he had enjoyed at Saenz Gorditas. Gorditas are plump corn cakes with crisp exteriors and tender interiors, split open like pitas and filled with ground beef and picadillo. We developed this recipe using Maseca Instant Corn Masa Flour which still captures that comforting corn flavor. If you can’t find Colby-Jack cheese, Monterey Jack or cheddar cheese can be substituted (equally savory and delicious). To make it your own, add hot sauce, shredded iceberg lettuce, diced tomatoes, and extra cheese as you please!
Banana Pudding Pie
This pie—our take on the signature dessert at Buxton Hall Barbecue in Asheville, North Carolina—is a reimagining of the classic layered dessert of vanilla pudding, Nilla Wafers, and sliced bananas. For a sturdy crust, we used a combination of ground Nilla Wafers and classic ingredients (with specific portions!) and pressed it firmly up the sides and into the corners of the pie plate. A pinch of some spices rounded out the pudding's sweet, creamy vanilla flavor, which you can claim as your own secret recipe. We topped it all off with a cooked meringue, swapping in some brown sugar for added caramel undertones.
