Blackened Chicken
Blackening refers to coating quick-cooking proteins in a robust Cajun spice blend and flash-cooking them in a ripping-hot cast-iron skillet until the fat and spices smoke and char but don't completely burn. It's usually a smoky business, but it can be well controlled with a few test kitchen tricks including minding the shape of the chicken pieces and finessing their arrangement in the pan.
Weeknight Pasta Bolognese
Making rich Bolognese is often an all-day affair. For a quicker version that doesn’t sacrifice flavor, we skip searing the ground beef but do coat it with baking soda so that it stays tender as it cooks in the sauce. Tomato paste and red wine add brightness, and grated Parmesan offers savory depth and thickens the sauce. By cooking the pasta right in the sauce it absorbs the flavorful liquid and results in perfect noodle-coating consistency.
Omelet with Cheddar and Chives
Making a great omelet is easy to do if you know the steps (and we’ve got them!). The learning curve is really just practicing the motions and recognizing the visual cues. Once you can do that, the process—which takes all of 4 minutes—becomes smooth, and the burst of satisfaction you feel when that tight golden cylinder hits the plate never gets old.
Nutella Tart
Nutella is the surprise base for the no-bake filling of this easy-to-make chocolate tart featuring the irresistible combination of rich chocolate and hazelnuts. For a dense and velvety filling, make a simple ganache, adding butter (which helps the tart keep its shape when sliced), and cook the filling in the microwave.
